Olive oil production
in south America:
When thinking about olives and olive oil, it is common to picture
scenes from the Mediterranean. However, various Latin American
countries are olive oil producers as well. To learn more about olive oil
production in Uruguay, I interviewed Professor Bruno Irigiaray, from
the Fats and Oils Laboratory at the Chemistry Department School of
the Universidad de la República, Uruguay.
